Ingredients
- 3 cup Flour
- 1/4 cup Brown Sugar
- 1 tbsp Baking Powder
- 1 tbsp Baking Soda
- 1/2 tsp Cinnamon
- 1 each Egg
- 1 each Banana, over ripe, mashed
- 3/4 cup Milk, whole
- 2 tsp Vanilla Extract
- 1/2 cup Butter, cold, cubed
- 1 tbsp Milk, whole, TOPPING
- 1 tbsp Coarse Sugar, TOPPING

- 1 each Banana, over ripe, sliced
- 2 tbsp Walnuts, rough chopped
- 2 tbsp Chocolate Chips
- 1 tbsp Brown Sugar
- Cinnamon Icing -- ---
- 1/4 cup Powdered Sugar
- 1/4 tsp Cinnamon
- 2 tsp Vanilla Extract
- 1 tbsp Milk, whole
Method of Preparation
Step 1
Preheat the oven to 375°F. Line a sheet pan with parchment paper and lightly dust with flour.
Step 2
In a bowl, whisk together the egg, banana, milk, and vanilla. Set aside.
Step 3
In a separate bowl, mix together flour, brown sugar, baking powder, baking soda, and cinnamon.
Step 4
Add the cold butter to the flour bowl and "cut in" using a fork until you have pea sized lumps of butter throughout.
Step 5
Add in the wet mixture and fold in until barely combined. Do not over mix, some flour will not be incorporated.
Step 6
Take half the dough and press it into a 7 inch disc onto the baking sheet.
Step 7
Lay the sliced banana evenly across the disc, leaving a small edge. Sprinkle the brown sugar, walnuts, and chocolate chips on top of the bananas.
Step 8
Form the remaining dough into another 7 inch disc, top and press it evenly to the stuffed bottom.
Place the pan in the freezer for 20 minutes to firm up.
Step 9
Slice the disc into 8 wedges and space them about 1 inch part from each other.
Step 10
Lightly brush the tops with milk and sprinkle with coarse sugar.
Bake for 20-25 minutes, or until golden brown. Cool on a wire rack for 15-20 minutes before icing.
Step 11
In a small bowl, whisk together all the icing ingredients. If it is too thin, add more powdered sugar. Or if too thick, add more milk. Drizzle icing onto scones.
