Ingredients
- 1/2 lb Pasta, Gemelli
- 4 oz Pancetta, diced
- 1/2 pint Cherry Tomatoes, halved
- 1 cup Arugula
- 1 Avocado, diced (add 1/2 lime, juiced)
- 1 Red Onion, Small, thinly sliced
- Dressing: ---
- 1/4 cup Greek Yogurt, Plain
- 1/4 cup Mayonnaise
- 1 tbsp Red Wine Vinegar
- 1/2 Lime, juiced
- 1 tbsp Chives, finely sliced
- 1/2 tsp Dill, Dried
- 1/2 tsp Garlic Powder / Onion Powder
- 1/4 tsp Salt & Pepper
Method of Preparation
Step 1
Cook pasta until al dente, rinse under cool water, and transfer to a large bowl.
Step 2
Sauté pancetta until crispy. Transfer to a paper towel lined plate and drain well.
Step 3
In a small bowl combine all the dressing ingredients.
Step 4
Add all the remaining ingredients to the bowl of pasta and toss to combine.
Drizzle the dressing on top and lightly toss. Enjoy!
