BLT Pasta Salad

Ingredients

  • 1/2 lb Pasta, Gemelli
  • 4 oz Pancetta, diced
  • 1/2 pint Cherry Tomatoes, halved
  • 1 cup Arugula
  • Avocado, diced (add 1/2 lime, juiced)
  • Red Onion, Small, thinly sliced
  • Dressing: ---
  • 1/4 cup Greek Yogurt, Plain
  • 1/4 cup Mayonnaise
  • 1 tbsp Red Wine Vinegar
  • 1/2 Lime, juiced
  • 1 tbsp Chives, finely sliced
  • 1/2 tsp Dill, Dried
  • 1/2 tsp Garlic Powder / Onion Powder
  • 1/4 tsp Salt & Pepper

Method of Preparation

BLT Pasta Salad - Step 1

Step 1

Cook pasta until al dente, rinse under cool water, and transfer to a large bowl.

Step 2

Sauté pancetta until crispy. Transfer to a paper towel lined plate and drain well.

Step 3

In a small bowl combine all the dressing ingredients.

Step 4

Add all the remaining ingredients to the bowl of pasta and toss to combine.

 

Drizzle the dressing on top and lightly toss. Enjoy!
