Ingredients
- 1 each Shallot, minced
- 3 ea Garlic Cloves, minced
- 4-6 each Basil Leaves, Fresh, chopped
- 1/4 cup Banana Pepper Rings (mild), minced
- 1 tbsp Banana Pepper Brine
- 1 tbsp Olive Oil
- 1/4 tsp Salt & Pepper
- 2 ea Globe Tomatoes, sliced
- 4 tbsp Butter
- 8 slices Sourdough Bread
- 12 slices Mozzarella Cheese
- 1 cup Arugula , (micro or regular)
Method of Preparation
Step 1
In a large bowl add the shallot, garlic, basil, banana peppers, banana pepper brine, olive oil, salt & pepper.
Step 2
Add the sliced tomatoes to the bowl. Toss until all the tomatoes are well coated.
Step 3
Heat a sauté pan over medium-high heat and melt 1 tbsp butter.
Step 4
Add 2 slices of bread and toast each side until golden brown.
Step 5
Build sandwich:
- 2 marinated tomato slices
- 3 mozzarella slices
- Pinch salt & pepper
- Arugula
