Ingredients

  • 1 each Shallot, minced
  • 3 ea Garlic Cloves, minced
  • 4-6 each Basil Leaves, Fresh, chopped
  • 1/4 cup Banana Pepper Rings (mild), minced
  • 1 tbsp Banana Pepper Brine
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt & Pepper
  • 2  ea Globe Tomatoes, sliced
  • 4 tbsp Butter
  • 8  slices  Sourdough Bread
  • 12 slices Mozzarella Cheese
  • 1  cup Arugula , (micro or regular)

Method of Preparation

Marinated Tomato Sandwich - Step 1

Step 1

In a large bowl add the shallot, garlic, basil, banana peppers, banana pepper brine, olive oil, salt & pepper.

Step 2

Add the sliced tomatoes to the bowl. Toss until all the tomatoes are well coated.

Step 3

Heat a sauté pan over medium-high heat and melt 1 tbsp butter.

Add 2 slices of bread and toast each side until golden brown.

  • 2 marinated tomato slices
  • 3 mozzarella slices
