Ingredients
- 1 lb Sirloin Steak Tips, cut into 1-inch chunks
- 8 oz Black Beans, drained, rinsed
- 2 cup Cooked Rice
- 2 Avocadoes , halved
- Marinade: ---
- 1/4 cup Ketchup
- 1/4 cup Tamari
- 1 tbsp Orange Juice, Fresh
- 1 tbsp Molasses
- 1 tbsp Olive Oil
- 1 tsp Curry Powder / Thyme / Garlic Powder
- 1/2 tsp Chili Powder
- 1/4 tsp Cinnamon / Allspice
- 1/2 tsp Salt & Pepper
- Pinch Cayenne Pepper
- 1 tsp Fresh Ginger, grated
- 1 Garlic Clove, minced
- 2 Green Onions (Scallions), sliced thinly
- Pineapple Salsa: ---
- 1/2 Pineapple, small diced
- 1 Plum Tomato, seeds removed, small diced
- 1 Jalapeno Pepper, seeds removed, finely chopped
- 1/4 cup Cilantro, finely chopped
- 1/2 Red Onion, finely chopped
- 1 Lime, Juiced
- 1/2 tsp Salt & Pepper
Method of Preparation
Step 1
Preheat the oven to 400°F.
Line a sheet pan with aluminum foil and place a cooling rack on top.
Step 2
In a bowl combine all the marinade ingredients and whisk together.
Step 3
Add the steak tips, toss, and marinate for at least 1 hour.
*You can marinate 24 hours in advance*
Step 4
In a bowl mix all the salsa ingredients together in a bowl and set aside.
Step 5
Add the marinated steak tips to the cooling rack, trying not to overlap any pieces.
Bake for 12-15 minutes.
Step 6
To build one bowl add:
- 1/2 cup rice
- 1/4th steak
- 1/4 cup black beans
- 1/4 cup pineapple salsa
- 1/2 avocado
Garnish with fresh cilantro, scallions, and lime wedges.
