Ingredients

  • Onion, diced
  • Garlic Cloves, minced
  • 2 (4 oz) cans Diced Green Chilis
  • 2 tsp Cumin
  • 1 tsp Smoked Paprika
  • 1/2 tsp Chili Powder / Oregano / Garlic Powder
  • 1/4 tsp Salt & Pepper
  • 2 lb Chicken Thighs, Boneless/Skinless
  • 1 qt Chicken Broth
  • 1 cup White Cheddar Cheese, shredded
  • 1 cup Sour Cream
  • 1 (15.5 oz) can Cannellini Beans, drained, rinsed
  • 1 (8.75 oz) can Sweet Corn, drained, rinsed
  • 1/2 cup Salsa Verde
  • 1/2 cup Cilantro, chopped
  • Garnish -- Cheddar Cheese, Avocado, Tortilla Strips, Lime

Method of Preparation

White Chicken Chili - Step 1

Step 1

In the crockpot add onion, garlic, green chilis, spices, chicken, and chicken broth.

 

Cook on high for 4 hours or low for 8 hours.

Shred the chicken with two forks.

Stir in the cheddar cheese, sour cream, white beans, corn, salsa verde, and cilantro.

 

Mix until the shredded cheese and sour cream have melted into the soup.
