Ingredients
- 1 Onion, diced
- 4 Garlic Cloves, minced
- 2 (4 oz) cans Diced Green Chilis
- 2 tsp Cumin
- 1 tsp Smoked Paprika
- 1/2 tsp Chili Powder / Oregano / Garlic Powder
- 1/4 tsp Salt & Pepper
- 2 lb Chicken Thighs, Boneless/Skinless
- 1 qt Chicken Broth
- 1 cup White Cheddar Cheese, shredded
- 1 cup Sour Cream
- 1 (15.5 oz) can Cannellini Beans, drained, rinsed
- 1 (8.75 oz) can Sweet Corn, drained, rinsed
- 1/2 cup Salsa Verde
- 1/2 cup Cilantro, chopped
- Garnish -- Cheddar Cheese, Avocado, Tortilla Strips, Lime
Method of Preparation
Step 1
In the crockpot add onion, garlic, green chilis, spices, chicken, and chicken broth.
Cook on high for 4 hours or low for 8 hours.
Step 2
Shred the chicken with two forks.
Step 3
Stir in the cheddar cheese, sour cream, white beans, corn, salsa verde, and cilantro.
Mix until the shredded cheese and sour cream have melted into the soup.
Step 4
Garnish with your favorite toppings, enjoy!
