Ingredients

  • 2 cup Flour
  • 2 tbsp Sugar
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Ginger Powder
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • Pinch Mace
  • Eggs
  • 1/2 cup Butter, melted
  • 1 tsp Vanilla Extract
  • 1/3 cup Brown Sugar
  • 2 cup Buttermilk
  • Garnish: Sugared Cranberries / Powdered Sugar
  • Mascarpone Whipped Cream: --
  • 4 oz Mascarpone Cheese
  • 1 cup Heavy Cream
  • 3 tbsp Powdered Sugar
  • 1 tsp Vanilla Extract

Method of Preparation

Gingerbread Waffles - Step 1

Step 1

In a large bowl mix together the flour, sugar, baking powder, baking soda, and spices. Set aside.

In another bowl whisk together the butter and brown sugar.

 

Add the eggs, vanilla, and buttermilk.

Add in the flour and mix to combine. Do not overmix.

Cook in a waffle iron.

 

Transfer to a baking sheet and keep warm in a heated oven (200°F).

In a large bowl beat the mascarpone, heavy cream, and vanilla until combined.

 

Gradually add the powdered sugar and beat until stiff peaks form.

Serve the waffles with a dollop of mascarpone whipped cream, sugared cranberries, and powdered sugar. Enjoy!
