Ingredients
- 3 Egg Yolks
- 1/2 cup Sugar
- 8 oz Mascarpone Cheese
- 1 cup Whipping Cream
- 1 tsp Vanilla Extract
- 1 tbsp Sugar
- 1 cup Cold Coffee (or Espresso)
- 1 (17.6 oz) Panettone, large cubes
- 2 tbsp Cocoa Powder, Unsweetened
Method of Preparation
Step 1
In a glass bowl beat together the egg yolks and 1/2 cup sugar for 3 minutes.
Step 2
Place the bowl over a double boiler, on low, and whisk for 10 minutes.
The color will lighten. Remove from heat and let it come to room temperature.
Step 3
Beat in the mascarpone and vanilla until combined.
Step 4
In another bowl beat the cream and 1 tbsp sugar to stiff peaks.
Step 5
Fold the whipped cream into the mascarpone mixture. Do not overfold.
Step 6
Lay out the cubes of panettone on a sheet tray and brush with the coffee.
Step 7
In individual glasses add a layer of panettone, spoonful of mascarpone, layer of panettone, and topped with mascarpone.
Dust the top with cocoa powder. Enjoy!
To get 10 servings, do one layer of panettone and mascarpone.
