Ingredients
- 1/2 tsp Salt & Pepper
- 2 lbs (4 fillets) Skate Wing Fillets, skinned, trimmed
- 4 Fresh Thyme Sprigs
- 2 tbsp Butter, chunked
- 2 tbsp White Wine
- 1 tbsp Butter
- 1 Lemon, sliced
- 1/4 cup White Wine
- 2 Garlic Cloves, minced
- 4 tbsp Butter
- 2 tbsp Capers
- Garnish: Fresh Dill

Method of Preparation

Step 1
Preheat the oven to 375°F. Spray a baking dish with pan spray.

Step 2
Season skate with salt and pepper and add to the baking dish.

Step 3
Add thyme sprigs and chunks of butter on top of the skate.
Add wine to the dish.
Bake uncovered for 18-20 minutes.

Step 4
Heat a skillet over medium-high heat and melt 1 tbsp butter.
Add lemon slices and sear each side.

Step 5
Deglaze the pan with white wine and reduce by half.

Step 6
Add garlic, butter, and capers to the pan. Keep the sauce on the heat until it has thickened.

Step 7
Add the sauce to the baked skate, garnish with dill, and enjoy!
